Pineapple Chicken Stir-Fry
Quick and easy to prepare, our Pineapple Chicken Stir-Fry is ideal for busy weeknights. Serve it with white rice or noodles for a delightful blend of tropical and Asian-inspired flavors!
**Ingredient:
**2 chicken breasts, cut into bite-sized pieces
1 tablespoon vegetable oil
1 bell pepper, sliced
1 onion, sliced
1 cup pineapple chunks (fresh or canned)
2 cloves garlic, minced
1 tablespoon grated ginger
2 tablespoons soy sauce
2 tablespoons hoisin sauce
1 tablespoon rice vinegar
1 tablespoon honey (optional)
1/2 teaspoon red pepper flakes (optional for spice)
Cooked rice or noodles, for serving
Fresh cilantro or green onions, for garnish
Directions:
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the chicken pieces and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
- In the same pan, add the bell pepper, onion, and pineapple chunks. Stir-fry for 3-4 minutes until the vegetables begin to soften. Add the garlic and ginger and cook for another minute until fragrant.
- In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, and honey (if using). Pour the sauce over the vegetables and pineapple, stirring to coat.
- Return the cooked chicken to the pan and toss everything together to combine. Cook for an additional 2-3 minutes until everything is heated through and the sauce slightly thickens.
- Serve the stir-fry over rice or noodles and garnish with fresh cilantro or green onions.
