Pineapple Chicken Stir-Fry

Quick and easy to prepare, our Pineapple Chicken Stir-Fry is ideal for busy weeknights. Serve it with white rice or noodles for a delightful blend of tropical and Asian-inspired flavors!

**Ingredient:
**2 chicken breasts, cut into bite-sized pieces
1 tablespoon vegetable oil
1 bell pepper, sliced
1 onion, sliced
1 cup pineapple chunks (fresh or canned)
2 cloves garlic, minced
1 tablespoon grated ginger
2 tablespoons soy sauce
2 tablespoons hoisin sauce
1 tablespoon rice vinegar
1 tablespoon honey (optional)
1/2 teaspoon red pepper flakes (optional for spice)
Cooked rice or noodles, for serving
Fresh cilantro or green onions, for garnish

Directions:

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the chicken pieces and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
  3. In the same pan, add the bell pepper, onion, and pineapple chunks. Stir-fry for 3-4 minutes until the vegetables begin to soften. Add the garlic and ginger and cook for another minute until fragrant.
  4. In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, and honey (if using). Pour the sauce over the vegetables and pineapple, stirring to coat.
  5. Return the cooked chicken to the pan and toss everything together to combine. Cook for an additional 2-3 minutes until everything is heated through and the sauce slightly thickens.
  6. Serve the stir-fry over rice or noodles and garnish with fresh cilantro or green onions.
